When I cook Pork for a rice bowl like ‘Buta Don’, I usually season Pork with Soy Sauce. Today I didn’t use Soy Sauce. Instead, I used Lemon Juice and Salt for this one. It was delicious. I resisted the temptation to add Soy Sauce, but a little bit of Soy Sauce OR Fish Sauce can add extra flavour. Fatty Pork Belly and Lemon are a good combinmation.

Makes

1 Serving

Ingredients

120 to 150g thinly sliced Pork Belly *cut into large bite-size pieces
Oil for cooking *optional
1 serving warm Cooked Rice
Ground Black Pepper

Sauce
1/2 to 1 Spring Onion *finely chopped
1 small clove Garlic *grated
1 tablespoon Lemon Juice
1/4 cup Chicken Stock *OR 1/4 cup Water & 1/4 teaspoon Asian Chicken Bouillon Powder
1/4 teaspoon Salt
1 pinch Sugar
1/2 teaspoon Potato Starch
A few drops Sesame Oil

Method
  1. Combine all the Sauce ingredients in a small bowl.
  2. Heat a frying pan over medium to high heat, lightly oil it if necessary. If you use a non-stick pan, you don’t need it. Cook Pork until nicely browned. Use a piece of Paper Towel to remove excess fat in the pan.
  3. Stir the Sauce, then add to the pan, and stir to combine. The Sauce should thicken instantly.
  4. Half fill a bowl with warm Cooked Rice, cover it with the Pork mixture, sprinkle with ground Black Pepper, and enjoy. *Note: I added a wedge of Lemon for the presentation. You can squeeze it over the Pork if you like.
