
It is well known that eating spicy food can cool your body down. This refreshing dish of cold Angel Hair Pasta (Capellini) is something I often crave on a hot summer day. I don’t want to cook anything, but Angel Hair Pasta can be cooked in a few minutes. I can put up with it. Angel Hair Pasta can be replaced with Somen, Japanese thin noodles.

Ingredients
1 serving (about 80g) Angel Hair Pasta (Capellini)
80g thinly sliced Pork Belly *cut into the size that is easy to eat
Salt for cooking
1/4 cupful Kimchi
Finely chopped Spring Onion
Toasted Sesame Seeds
3 to 4 tablespoons ‘Mentsuyu’ (Noodle Dipping Sauce) *OR try Quick & Easy ‘Mentsuyu’
Quick & Easy ‘Mentsuyu’
50ml Water
1/6 teaspoon Dashi Powder *’Katsuo’ (Bonito) type recommended
3 teaspoons (15ml) Soy Sauce
2 teaspoons (10ml) Mirin
Method
- To make Quick & Easy ‘Mentsuyu’ (Noodle Dipping Sauce), place all ingredients in a heat-proof bowl, and bring to the boil in the microwave. Allow to cool, then chill in the fridge. *Note: It is your choice to boil this sauce OR not to boil it. You can just mix the ingredients.
- Cook Angel Hair Pasta (Capellini) as instructed. When Angel Hair Pasta are almost cooked, add Pork slices and cook until the colour has changed. It won’t take long at all. Drain and rinse under cold water, then drain well.
- Place Angel Hair Pasta and Pork in a serving bowl, cover with Kimchi, add some Spring Onion and Toasted Sesame Seeds, pour over ‘Mentsuyu’ sauce, and enjoy.
