
Since I saw this dish on the internet, I have been craving it as I love Green Peas. I have been hoping to use Fresh Green Peas, but they are not in season. Today I used Frozen Peas and they were just good enough. There was no recipe, so I just tried to recreate it. Whoever invented this dish, I thank the person. Softly cooked Egg is important as the gooey Egg Yolk is essential.
Makes
1 to 2 Servings
Ingredients
1 cup Frozen Peas *OR Fresh Peas
1 cup Water *OR enough to cover Peas completely
1/2 Vegetable Stock Cube *OR Salt as required
1 to 2 softly cooked Egg(s) *Poached Egg, Microwaved Egg, Boiled Egg, etc.
Olive Oil
Salt & Black Pepper
Grated Parmesan Cheese
Method
- Place Frozen Peas (OR Fresh Peas) in a small saucepan, add Water enough to cover Peas completely. I cup should be enough, but you need to add extra if required.
- Add Vegetable Stock Cube (OR Salt), bring to the boil, and simmer until cooked OR desired texture is achieved.
- Prepare Egg(s).
- Drain Peas, place in a serving deep plate, top with the Egg(s), drizzle with Olive Oil, add Salt & Black Pepper, sprinkle with grated Parmesan Cheese, and enjoy.
