Banana_Custard_Tart

I used to make this dessert for my children quite often. It was one of their favourites, but they were in doubt at first because they had never tasted cooked Bananas before. This tart tastes best when it is cold. I recommend to cool it completely. I have cooked it for the first time in many years to take this photo, and it instantly brought back my children (not children any more) their childhood memories.


Ingredients

1 Frozen Sweet Flan/Pie Base * I used 22cm case
*Note: I am sure that the home made sweet tart base would taste a lot better, but ready-to-bake frozen Sweet Pie Base is just fine. See ‘Easiest Sweet Shortcrust Pastry’ if you want to make it.
3 Bananas *if large, you probably need 2 and 1/2
2 Eggs
1/4 cup Caster Sugar
1/2 cup Cream
1 teaspoon Vanilla Extract
1 tablespoon Plain Flour
Almond Flakes

Method
  1. Preheat oven to 160 to 170C. Place the frozen sweet pie base on an oven tray.
  2. Mix Eggs, Sugar, Cream, Flour and Vanilla very well, then warm in the microwave. Do not cook the mixture, you just need to warm it at low power for a few minutes.
  3. Cut Bananas about 2 to 3cm and arrange the pieces on the pie base. If the pie base is still frozen, it is OK.
  4. Pour the Egg mixture over the Banana pieces and sprinkle some Almond Flakes, then bake for 50 minutes or until the custard is cooked and golden. Cool completely.
