Rubbery Udon Noodles can go well with many different flavours. Today I cooked Beef Stroganoff using leftover Beef and Sour Cream, and added Udon Noodles to it. It was a surprisingly good match. Pickled Cucumber is absolutely recommended as I always add it to my ‘Super Easy Beef Stroganoff’. If you don’t have Udon Noodles, Pasta is a perfect substitute for this dish. Gnocchi would be great.

Ingredients

1 Cooked Udon Noodles *Frozen type recommended
1/2 tablespoon Oil *I used Sunflower Oil
1/4 Onion *thinly sliced
1 small clove Garlic
80g Beef Steak *thinly sliced
1-2 Mushrooms
2 tablespoons Sake (Rice Wine) *OR Water, Beef Stock, etc.
2 to 3 tablespoons Sour Cream
1/2 small Pickled Cucumber *sliced
Salt & Black Pepper
Finely chopped Parsley *optional

Method
  1. Heat Cooked Udon Noodles in boiling water, then drain.
  2. Heat Oil in a frying pan over the medium heat. Cook Onion and Garlic, add Beef, then add Mushroom. Stir for a few minutes.
  3. Season strongly with Salt and Pepper. Add Sake (OR Water, Stock OR Wine) and Sour Cream, Pickled Cucumber and Udon, and stir to combine.
  4. Sprinkle with some extra Black Pepper and finely chopped Parsley, and enjoy.
