
Rubbery Udon Noodles can go well with many different flavours. Today I cooked Beef Stroganoff using leftover Beef and Sour Cream, and added Udon Noodles to it. It was a surprisingly good match. Pickled Cucumber is absolutely recommended as I always add it to my ‘Super Easy Beef Stroganoff’. If you don’t have Udon Noodles, Pasta is a perfect substitute for this dish. Gnocchi would be great.

Ingredients
1 Cooked Udon Noodles *Frozen type recommended
1/2 tablespoon Oil *I used Sunflower Oil
1/4 Onion *thinly sliced
1 small clove Garlic
80g Beef Steak *thinly sliced
1-2 Mushrooms
2 tablespoons Sake (Rice Wine) *OR Water, Beef Stock, etc.
2 to 3 tablespoons Sour Cream
1/2 small Pickled Cucumber *sliced
Salt & Black Pepper
Finely chopped Parsley *optional
Method
- Heat Cooked Udon Noodles in boiling water, then drain.
- Heat Oil in a frying pan over the medium heat. Cook Onion and Garlic, add Beef, then add Mushroom. Stir for a few minutes.
- Season strongly with Salt and Pepper. Add Sake (OR Water, Stock OR Wine) and Sour Cream, Pickled Cucumber and Udon, and stir to combine.
- Sprinkle with some extra Black Pepper and finely chopped Parsley, and enjoy.
