It was time to make my lunch. I had a look in the fridge to see what I had and saw a small amount of thinly sliced Beef. I instantly decided to cook ‘Beef & Wakame Soup’. I added Udon Noodles to make it into a filling meal. This is another quick & easy Udon dish. It was cold today and the hot Udon soup was very comforting.

Ingredients

1 serving Cooked Udon Noodles *frozen type recommended
60g Beef *thinly sliced and cut into bite-size pieces
1/2 teaspoon Sesame Oil
1 small clove Garlic *finely chopped OR grated
300ml Beef Stock *OR water & 1 teaspoon Asian Chicken Bouillon Powder
1 teaspoon Soy Sauce
Salt & White Pepper
1 tablespoon Dry Cut Wakame
1/2 Spring Onion *finely chopped
Toasted Sesame Seeds

Method
  1. Heat Cooked Udon Noodles in boiling water, then drain.
  2. Heat Sesame Oil in a saucepan and cook Beef. Add Garlic and Stock, bring to the boil, and season with Soy Sauce, Salt & Pepper. Add Dry Cut Wakame and simmer until Wakame is soft.
  3. Place the drained Udon in a bowl, cover with the soup, add Spring Onion and Toasted Sesame Seeds, and enjoy.
