This is a very simple dish that you can make with 1 can of Black Beans. It is super easy to cook if you have rice cooker. Today I used Cumin and Coriander Seeds to season, but you can use any Spices and Herbs of your choice. It can be Mexican, Mediterranean, Moroccan, Indian, OR any flavour.

Ingredients

1/2 Onion finely chopped
1 clove Garlic *finely chopped
1 tablespoon Olive Oil OR Oil of your choice
2 cups (*180ml cup) Long Grain Rice
400ml Chicken Stock OR Stock of your choice *must be cooled
1 teaspoon Ground Cumin
1 teaspoon Ground Coriander Seeds
*Note: You can use any other Spices and Herbs of your choice
1/4 teaspoon Salt *alter the amount depending on the saltiness of the stock
Ground Black Pepper OR Chilli as required
1 can (400g) Black Beans *drained and rinsed
Coriander Leaves *optional, you can use Spring Onion, Parsley, etc.
Extra Black Pepper OR Chilli *optional

Method
  1. Place Onion and Garlic in the rice cooker’s inner pot. Drizzle with Olive Oil.
  2. Rinse Rice, drain well, and spread over the Onion and Garlic.
  3. Add Chicken Stock (OR Stock of your choice), Spices and Salt, but DO NOT stir. Spread drained Black Beans on top and start cooking. *Note: I added finely chopped Stock Cube.

  4. When the rice is cooked and steamed, gently mix to combine, sprinkle with some Coriander Leaves (OR chopped Spring Onion, Parsley, etc.) and extra Black Pepper (OR Chilli), and serve. *Note: I added some wedges of Lime.
