
You friend is coming over for dinner? You can’t skip dessert, can you? Consider a Parfait Dessert. You don’t need specialty parfait glassware. You can use drinking glasses. This is a healthy version of Parfait that is made with Greek Yoghurt. Fresh Blueberries are currently very expensive in Melbourne where I live, so I used Frozen Blueberries. Sauce can be made quickly and easily in the microwave. Assemble the ingredients as you like. It will impress anyone.
Ingredients
Granola, Cookies OR Sponge Cake, etc.
Unsweetened Greek Yoghurt
Blueberries *frozen OR fresh
Ice Cream *I added Vanilla Ice Cream, Blueberry & Yoghurt Ice Cream would be nice.
Microwave Blueberry Sauce
*Note: This amount would be enough for 4 servings
1 cup Frozen Blueberries
2 tablespoons Sugar
1/2 teaspoon Corn Starch *optional, mixed with 1/2 teaspoon Water
Method
- To make Blueberry Sauce, place Frozen Blueberries and Sugar in a heat-proof bowl, cook in the microwave for 1-2 minutes OR until soft. Gently stir, bring to the boil, then stir again. Cool completely. The sauce will slightly thicken when cooled. *Note: If you wish to make the sauce thicker, stir in Corn Starch mixture, then bring back to the boil again, and stir well.
- You can assemble a parfait as you like. I placed Granola in the glass first. It can be broken Cookies OR Sponge Cake, etc. Something you like to eat with Yoghurt.
- I added Greek Yoghurt, cooled Blueberry Sauce and Frozen Blueberries in layers. Then placed a scoop of Ice Cream on top, and decorated with Blueberries. Be creative and enjoy making it.
