‘Menma’ is made from fermented Bamboo Shoots and it is a very popular topping for Ramen Noodle Soups. However, it is tricky to make ‘Menma’ at home as it involves drying and fermentation processes. But this ‘Braised Bamboo Shoots’ tastes quite similar to ‘Menma’ and it is so easy to make. Use Canned Bamboo Shoots that are available from most supermarkets.

Ingredients
1 Canned Bamboo Shoots (Sliced) *about 230g
1 teaspoon Sesame Oil
1 tablespoon Soy Sauce
1 tablespoon Mirin
2 tablespoons Sake (Rice Wine)
La-Yu (Chilli Oil) *optional
Method
- Drain the canned Bamboo Shoots, rinse under cold water, and drain.
- Heat Sesame Oil in a saucepan and cook Bamboo Shoots for a minute or so. Add Soy Sauce, Mirin and Sake (Rice Wine) over medium heat and cook until the sauce is gone.
- Add some drops of La-Yu (Chilli Oil) and mix well.
