When people try to lose weight, Rice Soup is considered as a good meal to eat because it is very filling and can be nutritious and low in calories. The main ingredient of this Rice Soup is Cabbage. Protein is important, so I added Egg. This Rice Soup is also a good meal when you are unwell. In that case, I recommend to cook Cabbage very softly.

Ingredients

100g Cabbage *OR add more
300ml Dashi Stock *OR Stock of your choice
*Note: Today I used 300ml Water and 1/2 teaspoon Dashi Powder
1 teaspoon Soy Sauce
1 small bowlful Cooked Rice *about 100g
Salt as required
1 Spring Onion *finely chopped
1 Egg *whisked
*Note: You may wish to add other ingredients such as Carrot, Wakame, Shiitake, OR Tofu, etc.

Method
  1. Cut Cabbage into small pieces. Today I cut it into 8-10mm in size. Place in a saucepan, add Stock, bring to the boil and cook for a few minutes.
  2. Add Soy Sauce and Cooked Rice, and cook until Rice is soft. If you are cooking this for someone who is unwell, I recommend to cook very softly.
  3. Taste the soup, add some Salt as required, then add Spring Onion and whisked Egg, and gently stir. When Egg is cooked, it is ready.
