
I often cook a curry flavoured Spaghetti dish for lunch. The essential ingredients are Onion, Garlic, Tomato, Curry Powder and Spaghetti. I most likely add thinly sliced Pork OR Beef. Today I used a small can of Mackerel. Quick and easy to cook, nutritious and delicious, and it doesn’t cost me much. If you like Mackerel, you should try it.

Ingredients
1 serving Spaghetti
Salt for cooking
1 can (125g) Mackerel in Brine OR Oil *drained and broken into small pieces
1/4 Onion *thinly sliced
1 clove Garlic *finely chopped
1/2 teaspoon grated Ginger *optional
1/2 Tomato *cut into bite-size pieces
1 tablespoon Oil *can be Oil from the can of Mackerel
1 teaspoon Curry Powder
1/2 tablespoon Soy Sauce
1 tablespoon Sake (Rice Wine) *optional
Finely chopped Spring Onion
Method
- Cook Spaghetti in boiling salted water according to the instruction on the package. Prepare Onion, Garlic, Ginger and Tomato.
- Heat Oil, Garlic and Ginger in a frying pan over medium heat. When aromatic, add Onion, and stir for a minute. Add Curry Powder and Tomato, and stir for a minute.
- Add drained Mackerel, add Sake (Rice Wine) and stir, then add Soy Sauce and Spaghetti with some water that has been cooking Spaghetti, and mix to combine.
- Sprinkle with some finely chopped Spring Onion and enjoy.
