I often cook a curry flavoured Spaghetti dish for lunch. The essential ingredients are Onion, Garlic, Tomato, Curry Powder and Spaghetti. I most likely add thinly sliced Pork OR Beef. Today I used a small can of Mackerel. Quick and easy to cook, nutritious and delicious, and it doesn’t cost me much. If you like Mackerel, you should try it.

Ingredients

1 serving Spaghetti
Salt for cooking
1 can (125g) Mackerel in Brine OR Oil *drained and broken into small pieces

1/4 Onion *thinly sliced
1 clove Garlic *finely chopped
1/2 teaspoon grated Ginger *optional
1/2 Tomato *cut into bite-size pieces
1 tablespoon Oil *can be Oil from the can of Mackerel
1 teaspoon Curry Powder
1/2 tablespoon Soy Sauce
1 tablespoon Sake (Rice Wine) *optional
Finely chopped Spring Onion

Method
  1. Cook Spaghetti in boiling salted water according to the instruction on the package. Prepare Onion, Garlic, Ginger and Tomato.
  2. Heat Oil, Garlic and Ginger in a frying pan over medium heat. When aromatic, add Onion, and stir for a minute. Add Curry Powder and Tomato, and stir for a minute.
  3. Add drained Mackerel, add Sake (Rice Wine) and stir, then add Soy Sauce and Spaghetti with some water that has been cooking Spaghetti, and mix to combine.
  4. Sprinkle with some finely chopped Spring Onion and enjoy.
