This simple Carrot Salad is very versatile. It is quick and easy to make if you have a vegetable slicer, and it can be made with Carrot only, but I often add some extra ingredients such as Onion, Ham, Tuna, Parsley, Mustard, etc. Today I added Chikuwa, Japanese Tubular Fish Cakes, as you can see the photo below.

2 to 4 Servings

Ingredients

1 large Carrot *about 200g
1/4 teaspoon Salt
1 tablespoon Olive Oil OR Oil of your choice
1 tablespoon Vinegar of your choice *I used Rice Vinegar
Ground Pepper
Sugar *depending on the sourness of the Vinegar, I added 1/4 teaspoon

Additional Ingredients
Thinly sliced Onion
Finely chopped Parsley
Ham *cut into strips
Chikuwa (Japanese Tubular Fish Cakes) *cut into strips
Mustard of your choice *Dijon, Wholegrain, etc.

Method
  1. Cut Carrot into thin strips. It would be easy if you use a vegetable slicer. Add Salt, mix well, then set aside for 10 minutes. Squeeze to remove excess salty water and place in a mixing bowl.
  2. Add Oil, Vinegar and Pepper (OR Chilli), and mix well. Taste it, and add some Sugar if required, and mix well. Today I added 1/4 teaspoon Sugar.
  3. Add extra ingredients and mix to combine. The photo below is the same salad with Ham and Onion.
  4. I added Chikuwa (Japanese Tubular Fish Cakes), cut into strips, to the one below.
