I am a huge fan of Spaghetti Aglio Olio e Peperoncino. Mackerel is my favourite fish. Those two combined can’t go wrong. This dish is absolutely easy to cook and DELICIOUS!!! Today I added Onion as well. It is optional and you can add other vegetables instead, but the cooked Onion adds slight sweetness to this dish.

Ingredients

1 serving Spaghetti
Salt for cooking Spaghetti
1 teaspoon Olive Oil
1/4 Onion *optional, thinly sliced
1 clove Garlic *coarsely chopped
Chilli Flakes OR Chilli as required
1 can (125g) Mackerel in Olive Oil
Salt & Black Pepper
1 tablespoon finely chopped Parsley

Method
  1. Cook Spaghetti in boiling salted water according to the instruction on the package.
  2. When Spaghetti are nearly cooked, heat Olive Oil, Garlic and Chilli in a frying pan over medium heat. Add Onion, cook for 1 minutes, empty the can of Mackerel into the pan, and simmer for a minute.
  3. Add the cooked Spaghetti with 2-3 tablespoons salted water that has been cooking Spaghetti, and season with Salt & Black Pepper.
  4. Add Parsley and mix to combine. I sprinkled with some extra Parsley and Black Pepper.
