Korean ‘Namul’ and Japan’s ‘Aemono’ are same type of dish, that is basically seasoned Vegetables. Sesame Oil is commonly used to season ‘Namul’. There are multiple methods to make Carrot ‘Namul’. Some people microwave Carrot, some people just add Salt and massage, but I have found stir-frying is the easiest and this method makes Carrot really sweet.

Ingredients
2 to 3 Carrots *about 250 to 300g
1 to 2 tablespoons Sesame Oil
1/4 to 1/2 teaspoon Salt *alter the amount
2 teaspoons Toasted Sesame Seeds
1/2 clove Garlic *optional, grated
Method
- Cut Carrots into thin strips. Using a vegetable slicer, it can be done easily.
- Heat Sesame Oil in a frying pan, cook Carrot until soft. Season with Salt. Add Toasted Sesame Seeds and grated Garlic (If you add it), and mix to combine.
- *Note: Alternatively, you can add Salt to uncooked Carrot, massage, and set aside for a while. When softened, remove excess water if there is any, add Sesame Oil, Sesame Seeds and Garlic, and mix well to combine. Carrot won’t become sweet in this method.

My first time making carrot namul, I followed the recipe exactly and it turned out perfect. Tastes exactly like the one at my local Korean restaurant. I had no idea how simple this dish was to make- thanks for sharing this wonderful recipe!

Hi Michelle. Thank you for posting the comment. I’m glad to know the recipe worked well for you. If you use a different oil such as Olive Oil and add some herbs such as Thyme instead of Sesame, it can be in western flavour. Enjoy your own creation.

This is so good. I make the no-cook version at least every other week (I like my carrots less sweet). This is one of my favorite ways to make carrots now.
