The other day, when I was preparing Chicken Patties, I thought about extra ingredients to add. I always add Onion OR Spring Onion, sometimes add Carrot, Zucchini, Broccoli, Mushrooms, etc. Then I realised I had never ever added Potato. Today I tried to make Chicken & Potato Patties, but I decided to make bite-size balls and fried them. I used 250g Chicken Mince and 2 Potatoes, and all disappeared instantly. I will double the recipe next time.


Makes

3 to 4 Servings

Ingredients

2 medium size Potatoes *about 400g
1/2 Onion *very finely chopped
1 small clove Garlic *grated
250g Chicken Mince
1/2 teaspoon Salt
1/4 teaspoon Ground Pepper
2 tablespoons grated Parmesan Cheese
Oil for rolling and frying
Ketchup OR Tomato Sauce to serve

Method
  1. Peel Potatoes, coarsely grate, squeeze to remove excess water, and place in a mixing bowl. Add all other ingredients, and mix to combine.
  2. Wet your hands with Oil and roll the mixture into balls, about 3cm in diameter.
  3. Heat Oil, at least 5cm deep, and fry the balls. Turn them over a few times. When nicely browned and cooked through, transfer to a rack OR a plate lined with paper towel.
  4. Serve with Ketchup, Tomato Sauce OR your favourite sauce.
