
The other day, when I was preparing Chicken Patties, I thought about extra ingredients to add. I always add Onion OR Spring Onion, sometimes add Carrot, Zucchini, Broccoli, Mushrooms, etc. Then I realised I had never ever added Potato. Today I tried to make Chicken & Potato Patties, but I decided to make bite-size balls and fried them. I used 250g Chicken Mince and 2 Potatoes, and all disappeared instantly. I will double the recipe next time.

3 to 4 Servings
Ingredients
2 medium size Potatoes *about 400g
1/2 Onion *very finely chopped
1 small clove Garlic *grated
250g Chicken Mince
1/2 teaspoon Salt
1/4 teaspoon Ground Pepper
2 tablespoons grated Parmesan Cheese
Oil for rolling and frying
Ketchup OR Tomato Sauce to serve
Method
- Peel Potatoes, coarsely grate, squeeze to remove excess water, and place in a mixing bowl. Add all other ingredients, and mix to combine.
- Wet your hands with Oil and roll the mixture into balls, about 3cm in diameter.
- Heat Oil, at least 5cm deep, and fry the balls. Turn them over a few times. When nicely browned and cooked through, transfer to a rack OR a plate lined with paper towel.
- Serve with Ketchup, Tomato Sauce OR your favourite sauce.
