This is one of the dishes that I leaned at primary school. Cooking class was a part of Home Economics program that started in the 5th year. I was in the 6th year, probably 11 years old, when I learned this dish, and I am still cooking it more than 50 years later. When I need a simple side dish quickly, I often cook this ‘Fluffy Boiled Potato’. We learned to season with Salt & Pepper, but you can add other Spices. Curry Powder is good. You may wish to add Herbs such as Parsley, OR a little bit of grated Parmesan. This dish is very versatile.

Method
- Peel Potatoes and cut into bite-size pieces. Cook in salted Water in a saucepan until just soft.
- Drain, return into the saucepan, season with Salt & Pepper, and heat over low heat to remove moisture as you shake the saucepan, and make the outside of Potato pieces fluffy.
