Thanks to Pokemon, ‘Potato Mochi’ has become better known outside Japan. My ‘Easy Potato Mochi’ is very versatile and you can add extra ingredients. Today I added Bacon and Cheese. The cake of Mashed Potato, Bacon and Cheese can’t go wrong, can it? Actually it can. You must season it carefully because Bacon is salty.


Makes

4 x 5cm Potato Mochi

Ingredients

1 large Potato OR 2 Potatoes *about 250 to 300g
Salt for cooking Potato
Salt & Pepper
2 tablespoons Corn Starch OR Potato Starch *1 tablespoon is 15ml
*Note: You can use Glutinous Rice Flour instead.
80g Bacon
25g Cheese *cut into small cubes OR pieces
Oil for cooking *Butter can be used

Method
  1. Peel Potato, cut into smaller pieces, and place in a saucepan. Cover with Water, add 1/2 teaspoon Salt (OR more Salt if you add more Water), and cook until absolutely soft.
  2. While Potato is cooking, prepare Bacon. Cut it into small pieces and cook in a small frying pan until nicely browned. Remove unwanted fat.
  3. Drain cooked Potato and mash until smooth. Cool slightly.
  4. Lightly season with Salt & Pepper, add Corn Starch (OR Potato Starch), and mix well. If it is still too wet, add extra Starch. Today I added 2 tablespoons. *Note: You can use Glutinous Rice Flour if you have it.
  5. Add Bacon and Cheese to the Potato, mix to combine, and form into discs. Today I made 4 discs about 5cm in diameter.

  6. Heat a frying pan over low heat, lightly Oil it, and cook the Potato Mochi for 5 minutes OR until bottom side is nicely browned. Turn them over and cook the other side as well. *Note: If you have a lid, cover the pan with the lid.
  7. Enjoy while they are hot with your favourite sauce, but these Potato Mochi are tasty without any sauces.
