This dish of baked Salmon is quick and easy to prepare, absolutely delicious, and looks pretty. I use my mini toaster oven to bake them, but you can use regular oven, or you may wish to use air fryer, which I have never used. You may prefer cooking larger fillets of Salmon. In that case, you need to alter the cooking time.

Makes

2 Servings

Ingredients

300g Skin-Off Salmon Fillets *bone removed and cut into chunky bite-size pieces
Salt
Ground Pepper *I used White Pepper

Dill & Parmesan Sauce
15g Parmesan Cheese *grated
1 tablespoon finely chopped Onion
2 tablespoons Japanese Mayonnaise
1 teaspoon finely chopped Dill
1 teaspoon finely chopped Parsley
1 pinch Salt

Method
  1. Season Salmon pieces with Salt fairly strongly. Leave them in the fridge for a few hours.
  2. Combine all the Sauce ingredients.
  3. Oil a small baking tray OR line it with baking paper OR foil. *Note: If you line the tray with foil, you should oil the foil.
  4. Dry Salmon pieces with paper towel if they are wet. Sprinkle with some Ground Pepper, place on the prepared tray, spoon the sauce on top of each piece.
  5. Bake until nicely browned and cooked to your preference. I baked in my Mini Toaster Oven for 8 minutes. You can bake in a hot oven, 220℃ OR hotter, for 10 to 15 minutes OR until nicely browned and cooked to your preference.
