On the other day, I heard a friend of mine complaining about something I would love. She grows vegetables in the backyard and occasionally gets too much harvest to eat. She was particularly complaining about too much cucumbers. Ahhh… come on! Here is an Asian flavoured ‘Miso Dip’ that would help her to snack a lot of fresh vegetables. You may wish to add small amount of Sugar to suit your taste. Sesame Oil can add extra flavour.
Ingredients
Miso 2 tablespoons *dark OR light coloured
Gochujang (Korean Spicy Miso) 1/2 to 1 tablespoon
Mirin 2 tablespoons
Garlic 1 clove *grated
Roasted Walnut 1/2 cup *coarsely crushed
Rice Vinegar 1 to 2 teaspoons
Method
- Roast or lightly toast Walnuts and allow them cool. Using Suribachi or mortar & pestle, coarsely crush.
- Add other ingredients and mix well.
- Serve with your favourite fresh vegetables cut into sticks. Cucumbers particularly go well with this dip.

Hi Chris. Thank you foe your comment. Honestly I am not sure. I have never made a large amount and it was consumed quickly. I assume it could last a few weeks.
