This is a dish that I would want to eat on a very hot day. You can use any Long Pasta OR Noodles of your choice, but I like to use Capellini (Angel Hair Pasta) because it can be cooked very quickly. Other than that, you don’t need to cook anything. Just mix all ingredients and enjoy it.

Ingredients

1 serving Capellini (Angel Hair Pasta) OR Any Noodles *about 80g
Salt for cooking Capellini
1 can (125g) Mackerel in Brine *drained, broken into bite-size pieces
5-6cm Cucumber *How To Cut Cucumber Into Thin Strips
*Note: You can also add some thinly sliced other vegetables such as Onion, Carrot, Lettuce, etc.
Toasted Sesame Seeds for topping
Boiled Egg *optional

Sauce
1 small clove Garlic *grated
1/2 tablespoon Sugar *alter the amount to suit your taste
1/2 tablespoon Soy Sauce
1/2 tablespoon Rice Vinegar
1/2 tablespoon Sesame Oil
1/2 to 1 tablespoon Gochujang (Korean Spicy Miso)

Method
  1. In a mixing bowl, combine all the Sauce ingredients. You may wish to add more Gochujang.
  2. Before you start cooking Capellini (Angel Hair Pasta), prepare all other ingredients. Cut all vegetables into thin strips.
  3. Cook Capellini in boiling salted water according to the instruction on the package. It takes 2 to 3 minutes. Drain, cool in cold water, drain, cool again, then drain well. *Note: Noodles should be COLD.
  4. Add the drained Capellini (OR other Noodles), Mackerel and Vegetable(s) to the Sauce, and mix to combine. Sprinkle with some Toasted Sesame Seeds, add Boiled Egg if you want to do so, and enjoy.
