Today I discovered a bottle of Tomato Passata, that was half empty, sitting in the alcohol cabinet. Why was it there? Someone used it while I was away from home. The Passata looked still OK. I decided to make Tomato Sauce. First I was planning to make it Italian OR Mexican flavour, but I changed my mind and made it Korean flavour. The result was fantastic. The Sauce was great with Chicken, Tofu, Chips, Vegetables, OR anything. If you need to use up leftover Passata, try this recipe.

About 1 cup

Ingredients

1/2 tablespoon Sesame Oil
1 to 2 cloves Garlic *grated
1 cup Passata
2 tablespoons Gochujang (Korean Spicy Miso) *alter the amount
2 tablespoons Brown Sugar *firmly packed, White Sugar can be used
2 tablespoons Soy Sauce
1 tablespoon Rice Vinegar

Method
  1. Heat Sesame Oil and Garlic in a saucepan over medium heat. When aromatic, add all other ingredients, and bring to the boil.
  2. Lower the heat, and simmer, occasionally stirring, until the desired consistency is achieved. *Note: You may wish to add extra Gochujang.
  3. This sauce is lovely with Chicken, Tofu, Chips, Vegetables, etc. You can use it like Ketchup to season ingredients OR as a dipping sauce.
