Leftover cooked rice that has turned dry and hard like sand grains. What do you cook with it? Rice soup is a good option. Try this Green Rice Soup. It is very easy and quick to prepare. The key ingredients are Edamame (Young Soy Beans) and Nori. Soft Tofu or Egg can be added.

Ingredients

1 & 1/2 cups Dashi Stock OR Chicken Stock
*Note: 1 & 1/2 cups Water and 3/4 teaspoon Dashi Powder
1 cup Cooked Short Grain Rice *firmly packed
1 Spring Onion *finely chopped, save some for topping
1 cupful chopped Green Vegetables *e.g. Bok Choy, Spinach, Silverbeet Leaves, Kale, etc.
1/4 cup Edamame (Young Soy Beans)
1 tablespoon Soy Sauce
1/2 tablespoon Mirin
Salt as required
1/2 teaspoon Grated Ginger
1/2 to 1 sheet Toasted Nori (Seaweed Sheet) *torn into small pieces

Method
  1. Place Dashi Stock and Cooked Rice in a saucepan, bring to the boil over medium high heat. Break down any lumps.
  2. Add all Vegetables, bring to the boil, reduce heat to low and simmer until vegetables are cooked. Season with Soy Sauce, Mirin and Salt.
  3. Add grated Ginger and stir, then remove from the heat.
  4. Pour the rice soup in a serving bowl, place plenty of Toasted Nori and saved Spring Onion on top, and enjoy.
