Sweet Miso & Walnut Sauce is very versatile. You can add it to Grilled Tofu or Grilled Eggplant. You can mix it with vegetables such as ‘Kurumi-ae Spinach’, or with Harusame noodles like this dish. Walnuts can be replaced by Toasted Sesame Seeds or other toasted nuts.

Ingredients

100g Harusame Noodles (Bean Thread Noodles)
1 Carrot *sliced into thin strips
Spinach OR Baby Spinach as required
1 tablespoon Miso *lighter colour miso recommended
1/2 to 1 tablespoon Soy Sauce *depends on the saltiness of Miso
1 tablespoon Mirin
1 tablespoon Sugar
2 to 4 tablespoons Toasted Walnuts *finely chopped
1 small piece Ginger *grated

Method
  1. Cook Harusame Noodles in boiling water until transparent. When noodles are almost cooked, add Spinach to blanch. Alternatively Spinach can be cooked separately. Rinse in cold water and squeeze drain well.
  2. Place Miso, Soy Sauce, Mirin, Sugar, Walnuts and Ginger in a large bowl and mix well.
  3. Add Harusame Noodles and the vegetables and combine.
