I made this Mug Cake based on my ‘Instant Mug Cake’ recipe, which is perfect for my 380ml mug. However, this cake’s batter rises a lot and every time it overflows a little bit. So, I recommend to use a larger mug OR place a plate underneath the mug when you cook it in the microwave, just in case. Otherwise, the cake is delicious and it can be made in 5 minutes.

Makes

1 to 2 Servings *I used 380ml mug

Ingredients

2 tablespoons Brown Sugar *1 tablespoon is 15ml
1 small pinch Salt
1 tablespoon Oil *I used Sunflower Oil
1/2 tablespoon Condensed Milk
1 Egg
1/4 teaspoon Vanilla Extract
4 tablespoons Self-Raising Flour
*Note: 1 pinch Bi-carb Soda makes the flavour authentic, but it makes the batter rise even more, so be careful.

Method
  1. Place Brown Sugar, Salt and Oil in a mug, and mix well. Add Condensed Milk, Egg and Vanilla, and mix until well combined. *Note: Chopsticks are the best tool to stir.
  2. Add Self-Raising Flour and mix well until smooth.
  3. Microwave for 1 to 1 & 1/2 minutes OR until cooked. *Note: This cake batter overflows my 380ml mug. I recommend to use a larger mug OR place a plate underneath the mug when you cook it.
  4. *Note: Try not to over-cook it as the cake turns dry and hard.
