Everyone would love this simple dish. It’s a ‘Kimpira’ dish, a stir-fried vegetables seasoned with Soy Sauce and Mirin (Sugar). When you need just one more side dish for dinner or something to fill a space in your Bento Box, this dish is perfect. You only need Potato and Carrot. Not many people stir-fry thinly sliced Potato. If you haven’t, try it!

Ingredients
1 large Potato
1 large Carrot
1 tablespoon Oil *1/2 Sesame Oil & 1/2 Vegetables Oil recommend
2 tablespoons Soy Sauce
1 tablespoon Sugar
Chilli Flakes OR Ground Chilli *optional
Toasted Sesame Seeds
Method
- Slice Potato and Carrot into thin strips. If you have a vegetable slicer, it can be done quickly.
- Heat Oil in a frying pan over medium high heat, cook Potato and Carrot until soft. Add Sugar and Soy Sauce (and Chilli ), and stir-fry until slightly caramelised.
- Sprinkle some Toasted Sesame Seeds on top. Enjoy with freshly cooked Rice.
