
‘Kinako’ is finely ground Roasted Soy Beans. It is a very popular food in many north Asian countries. As it is 100% Soy Beans, it is becoming popular as a healthy food in Melbourne where I live. This is my super quick and easy ‘Kinako’ Mug Cake recipe. I add 1 tablespoon ‘Kinako’ as I like subtle flavour of it, but you may wish to add more.
Makes
1 Serving *I used 380ml mug
Ingredients
1 tablespoon Oil OR melted Butter *1 tablespoon is 15ml, I used Sunflower Oil
2 tablespoons Brown Sugar *OR White Sugar
1 very small pinch Salt
1 Egg
1 tablespoon ‘Kinako’ (Finely Ground Roasted Soy Beans) *add extra if you like stronger flavour
3 tablespoons Self-Raising Flour
Whipped Cream to serve *optional
*Note: You may wish to add Vanilla. I don’t add it because I want to enjoy the subtle flavour of ‘Kinako’.
Method
- Combine Oil (OR melted Butter), Brown Sugar and Salt in a mug. Add Egg and mix well until smooth. Add ‘Kinako’ and Self-Raising Flour, and mix well. *Note: Chopsticks are the best tool to mix.
- Microwave for 60 to 90 seconds OR until cooked. Try not to over-cook it as the cake turns hard and dry. I used 1000W microwave and 80 seconds was a little too long.
- *Note: Today I enjoyed it with whipped Cream sweetened with Muscovado.
