This dish can be a side dish for two people, but I eat it as a meal. It is a very filling dish, but most of it is Iceberg Lettuce. You can use your favourite salad dressing, but I like to use Japanese Mayonnaise. It tastes similar to Coleslaw, but not too sweet.

Ingredients

40g Dried Harusame (Bean Thread Noodles)
100g Iceberg Lettuce
40g Ham slices
1 tablespoonful thinly sliced Red Onion
1/4 cup Corn Kernels
Additional Vegetables *e.g. Edamame, Cucumber, Carrot, etc.

Dressing
2 tablespoons Japanese Mayonnaise
1 teaspoon Lemon Juice OR Vinegar of your choice
1/2 teaspoon Sugar
1/8 teaspoon Salt
Black Pepper as required

Method
  1. Combine all the Dressing ingredients in a mixing bowl.
  2. Cook Dried Harusame (Bean Thread Noodles) in boiling water until soft, drain, cool in cold water, then drain well. Cut to 10cm in length and add to the mixing bowl.
  3. Cut all Vegetables and Ham into thin strips, and add to the bowl. Add Corn Kernels and all other ingredients. I added some Edamame Beans.
  4. Mix everything well, sprinkle with extra Black Pepper if you like, and enjoy.
