
This dish can be a side dish for two people, but I eat it as a meal. It is a very filling dish, but most of it is Iceberg Lettuce. You can use your favourite salad dressing, but I like to use Japanese Mayonnaise. It tastes similar to Coleslaw, but not too sweet.

Ingredients
40g Dried Harusame (Bean Thread Noodles)
100g Iceberg Lettuce
40g Ham slices
1 tablespoonful thinly sliced Red Onion
1/4 cup Corn Kernels
Additional Vegetables *e.g. Edamame, Cucumber, Carrot, etc.
Dressing
2 tablespoons Japanese Mayonnaise
1 teaspoon Lemon Juice OR Vinegar of your choice
1/2 teaspoon Sugar
1/8 teaspoon Salt
Black Pepper as required
Method
- Combine all the Dressing ingredients in a mixing bowl.
- Cook Dried Harusame (Bean Thread Noodles) in boiling water until soft, drain, cool in cold water, then drain well. Cut to 10cm in length and add to the mixing bowl.
- Cut all Vegetables and Ham into thin strips, and add to the bowl. Add Corn Kernels and all other ingredients. I added some Edamame Beans.
- Mix everything well, sprinkle with extra Black Pepper if you like, and enjoy.
