Today I want to share my embarrassingly quick and easy recipe for this Fried Rice, that is cooked in microwave. It takes less than 5 minutes to cook including preparation time and you don’t need a frying pan. You only need a heat-proof bowl and microwave. Today I used Pork and Spring Onion, but you can use other vegetables such as Peas and Corn.

Ingredients

80g thinly sliced Pork Belly *cut into bite-size pieces
Salt & White Pepper
1 teaspoon Sesame Oil
1 teaspoon Soy Sauce
1/2 teaspoon Asian Chicken Bouillon Powder
1 serving (about 200g) Cooked Rice
1 Spring Onion *chopped
Crispy Chilli Oil *optional

Method
  1. Place Pork pieces in a heat-proof bowl. Lightly season with Salt & White Pepper, add Sesame Oil, mix to combine, cover with a plate, and cook in the microwave until colour changes. I cooked for 40 seconds in my 1100W microwave.
  2. Add Soy Sauce, Asian Chicken Bouillon Powder, Cooked Rice and Spring Onion, and mix to combine. *Note: You can add Peas and Corn as well.
  3. Cover with a plate, and cook in the microwave for 2 minutes OR until the mixture is heated thoroughly. Add some Crispy Chilli Oil on top and enjoy. *Note: Add extra Salt OR Soy Sauce if required.
