There is one dish that I have been very fond of since my childhood. It’s a dish of Mackerel simmered in sweet miso sauce. Sadly I can’t cook it here in Melbourne because it is too hard to find fresh Mackerel. I have seen Spanish Mackerel in a fish shop, but not the Mackerel that is called ‘Saba’ in Japanese. Mackerel is actually my favourite fish.
Then I created this dish using canned Mackerel which is commonly available from most supermarket stores. The taste is almost same. It’s good enough for me. If you like Mackerel, why don’t you try it?

Ingredients

1 can (125g) Mackerel in Brine

Onion 1/4 *sliced
Oil 1 teaspoon
Spring Onion *finely Sliced, optional
Freshly Cooked Rice 1 serving

Miso Sauce Ingredients

Miso 1 tablespoon
Sugar 1 teaspoon
Sake OR Mirin 1 tablespoon
Grated Ginger 1 teaspoon
Soy Sauce 1 teaspoon *optional, depends on the type of Miso

Method
  1. Drain the Canned Mackerel and remove the brine. Make Miso Sauce by mixing all ingredients in a small bowl.
  2. Heat small amount of Oil in a frying pan over a medium heat, cook sliced Onion until transparent.
  3. Add Mackerel and the sauce and simmer over a low heat for a minute or so, and let all well combined.
  4. Half fill a bowl with freshly cooked rice and cover it with the Mackerel mixture. Sprinkle some finely sliced Spring Onion over and enjoy.
