‘Canned Mixed Beans (Four Beans), Edamame and Carrot’ is my favourite combination for a quick bean salad. Sometimes I add other salad vegetables such as Cucumber and Lettuce. Dress the salad with various dressings, but this is my absolute favourite. It’s ‘Japanese Mayonnaise, Soy Sauce and Wasabi’. If you don’t like Wasabi, try Garlic Chilli Sauce or Toban Djan (Chili Bean Sauce) that is also nice.

Ingredients

1 can (*400g) Mixed Beans (Four Beans) *drained and rinsed
1/2 cup Edamame *thawed, removed from pod
1 Carrot *cut into small pieces
2 tablespoons Parsley *finely chopped
Freshly Ground Black Pepper
2 tablespoons Japanese Mayonnaise
1/2 tablespoons Soy Sauce
1/2 tablespoons Wasabi
*Note: Wasabi can be replaced with Garlic Chilli Sauce, Toban Djan (Chili Bean Sauce)

Method
  1. Combine Japanese Mayonnaise, Soy Sauce and Wasabi in a bowl very well. You won’t enjoy a large chunk of Wasabi. It would kill my sinus!
  2. Add other ingredients and combine all. I recommend to keep in fridge overnight. Next day, the salad tastes much better.
