I have shared many Cucumber dish recipes on this website, but this is the dish that I make most frequently. It’s a dish of just Cucumber. By adding extra ingredients to this dish, you can create endless variations. Extra ingredients can be Onion, Chilli, Garlic, Tomato, Chicken, Squid, Wakame, Black Fungus, etc.

Ingredients

1 large Continental Cucumber *about 300g
1/4 to 1/2 teaspoon Salt

Sesame Dressing
1 tablespoon Toasted Sesame Seeds *lightly ground
1 small piece Ginger *grated
1/2 tablespoon Sugar *alter the amount to suit your taste
1 tablespoon Soy Sauce
1 tablespoon Rice Vinegar
1/2 tablespoon Sesame Oil

Method
  1. Wash Cucumber and cut into bite-size pieces. Today I cut it in half lengthways and sliced diagonally into chunky bite-size pieces.
  2. Sprinkle Salt and massage, then set aside for 15-30 minutes. Remove excess salty water.
  3. Combine all the Sesame Dressing ingredients and add to the Cucumber. Combine well and serve immediately. *Note: You can leave it in the fridge and marinate for a while. A lot of Water will come out and the dressing will get thinned down, but Cucumber taste good in this way, too.
