
Cook an Omelette and place it on warm cooked Rice, and pour the Sauce over. This dish can be made with Egg and Rice only, but I believe you have something to add to the Omelette. Today I added 1 Spring Onion and 1 Shiitake. Maybe you have Peas, OR Garlic Chives, etc. This is a simple, comforting, easy, nutritious and inexpensive dish that I love.

Ingredients
2 Eggs
Salt & White Pepper
Additional Ingredients: Shiitake, Spring Onion, Garlic Chives, Peas, Bamboo Shoot, Imitation Crab Meat, Chicken, Pork, Shrimps, etc. *Note: Today I added 1 Shiitake and 1 Spring Onion.
1/2 tablespoon Oil
1 serving warm Cooked Rice
Sauce
1/2 cup Chicken Stock *OR 1/2 cup Water & 1/2 teaspoon Asian Chicken Bouillon Powder
*Note: Dashi Stock is also good.
1/2 tablespoon Potato Starch
1/2 tablespoon Soy Sauce
1/2 tablespoon Mirin *OR 1/2 teaspoon Sugar
Method
- Combine all the Sauce ingredients in a measuring jug OR small bowl.
- If you are adding extra ingredients, prepare them into thin strips OR bite-size pieces. Whisk Eggs in a bowl, and season with Salt & White Pepper.
- Heat Oil in a small frying pan, non-stick preferred, over medium heat, cook additional ingredients. Pour the prepared Egg, and cook a round Omelette. Turn it over and remove from heat.
- Half fill a bowl with warm Cooked Rice, place the Omelette on top. Mix the Sauce very well, pour it into the frying pan, bring to the boil, and cook until the Sauce is thickened. Pour the Sauce over the Omelette, and enjoy.
