A quick, easy and healthy dish, that’s what I want to cook for my lunch. I cook Harusame Soup very often, because it is absolutely ‘quick, easy and healthy’. Today I made this Pho Inspired Chicken & Harusame Soup, and it was so good. Dry Harusame Noodles can be cooked in the seasoned soup very quickly. You must prepare everything before you start cooking.

Ingredients

300ml Chicken Stock *OR 300ml Water & 1 teaspoon Asian Chicken Bouillon Powder
1 teaspoon Fish Sauce *optional
Salt & White Pepper
120g to 150g Chicken Fillet *cut into bite-size pieces
40g Dry Harusame Noodles (Bean Thread Noodles)

Thinly sliced Red Onion
Finely chopped Spring Onion
Coriander Leaves
A wedge of Lime OR Lemon

Method
  1. Prepare all ingredients before you start cooking.
  2. Heat Chicken Stock in a saucepan, bring to the boil, and season with Fish Sauce, Salt and White Pepper.
  3. Add Chicken, cover with a lid, and cook for a few minutes. Add Dry Harusame Noodles, and cook until the noodles are soft.
  4. Add some Red Onion, Spring Onion and Coriander on top, squeeze a wedge of Lime (OR Lemon), and enjoy.
