‘Pork & Kimchi’ is a great combination that can be used for Fried Rice, Stir-fried Udon, Rice Bowl, and many many more. You can simply cook Rice with ‘Pork & Kimchi’. If a jar of Kimchi is sitting in your fridge, try this dish. You don’t need to precook anything. Just place all ingredients in a rice cooker. While the rice is cooking, make a refreshing salad. Delicious and nutritious dinner is easy!

Ingredients

200 to 250g Pork thinly sliced and cut into small pieces
1 tablespoon Soy Sauce
1 tablespoon Mirin
1 teaspoon Sesame Oil
White Pepper
2 cups (*180ml cup) Japanese Short Grain Rice
400ml Chicken Stock *OR 400ml Water & 1 teaspoon Asian Chicken Bouillon Powder
1/2 teaspoon Salt *alter the amount depending on the saltiness of the Stock
1/2 cup Kimchi *cut into the size that is easy to eat
2 Spring Onions *finely chopped

Method
  1. Thinly slice Pork and cut into small pieces, add Soy Sauce, Mirin, Sesame Oil and White Pepper, massage, and set aside while you are preparing other ingredients.
  2. Wash Rice a few times, drain well, and place it in the rice cooker’s inner pot. Add Chicken Stock, sprinkle with Salt, and gently stir.
  3. Place Pork pieces with all liquid on top of the Rice, and place Kimchi over the Pork, but DO NOT stir. Just spread evenly. Press ‘COOK’ button to start cooking.
  4. When rice is cooked, let it steamed for 10 minutes. Add Spring Onion and mix gently.
