I used to cook this dish using Canned Soy Beans, that is commonly available in Japan, but it is impossible to find in Melbourne where I live. I started using Edamame as Edamame are young Soy Beans and they are almost the same thing, although Edamame are crunchy. In Melbourne, frozen Edamame beans that are already removed from pods are available from most supermarkets. This is a quick, easy, delicious and nutritious dish for you to try.

How long can this keep in the fridge once cooled down?
Or is this something best eaten at time of cooking?

Hello. I strongly recommend to eat it when you cook it, but naturally it can be stored in the fridge for a few days I suppose. As Pork fat hardens when it is cold, you need to heat it up when you eat this dish. And you expect the colour and texture of Spring Onion will become inferior.

Thank you!
I am thinking more of something that I can cook early in the week to take to work and microwave.
I will cook this for dinner tonight and check your other recipes for lunch in the week!
