The name of this dish sounds a little confusing, but this is not a Ramen dish. This is a Udon dish, but the Udon noodles are in Ramen soup. Udon can go well with any flavoured soups and sauces. If you have Instant Ramen Soup powder, why don’t you use it? This is a super simple yet comforting and filling Udon dish. Today I added just Chicken, but you can add any vegetables you like.

Ingredients

1 serving Cooked Udon
100g Chicken Thigh Fillet *cut into bite-size pieces
1 teaspoon Sesame Oil
1 small clove Garlic *finely chopped
1/2 Spring Onion *finely chopped

Ramen Soup
300ml Water
1 teaspoon Asian Chicken Bouillon Powder
1/4 teaspoon Dashi Powder *I used Kombu (Kelp) Dashi Powder
1 tablespoon Soy Sauce
1/4 teaspoon Salt *alter the amount
Ground Pepper OR Chilli *I always prefer finely ground White Pepper for Ramen soup, but please use your favourite Pepper OR Chilli.

Method
  1. In a measuring jug or bowl, combine all the Soup ingredients.
  2. Heat Sesame Oil in a saucepan, cook Chicken and Garlic, add the Soup, and bring to the boil. When Chicken is cooked, the soup is ready. Taste it, and add extra Salt if required.
  3. Meanwhile, heat Cooked Udon Noodles in boiling water in a saucepan. When hot, drain and place in a serving bowl. Cover with the soup and Chicken. Add Spring Onion and extra Pepper, you may prefer Chilli, and enjoy.
