When weather is becoming cooler, you want to bake a comforting dessert, don’t you? Do you know this popular dessert is super easy to make? You can prepare it in advance and it takes about 30 minutes to bake. Grab a bunch of Rhubarb and some Cooking Apples next time you go shopping. This ‘Rhubarb & Apple Crumble’ can be a delicious treat for your family OR guests. And it is easy to make.


Makes

4 to 6 Servings

Ingredients

1 bunch (about 400g) Rhubarb
2 to 3 Granny Smith Apples *OR Cooking Apples of your choice
*Note: You need to choose Cooking Apples that soften quickly.
1/4 cup Caster Sugar
Zest of 1 Orange *grated
2 tablespoons Orange Juice
Whipped Cream OR Vanilla Ice Cream to serve

Crumble Topping
80g Butter *softened
1/2 cup (80g) Brown Sugar *lightly packed
1/4 to 1/2 teaspoon Ground Cinnamon *optional
1/2 cup Self-Raising Flour *plus extra
1/2 cup Rolled Oats

Method
  1. To make the Crumble Topping, mix Butter and Sugar in a mixing bowl, add Cinnamon, Self-Raising Flour and Rolled Oats, and mix until just combined. Add extra Flour and make into crumble. Leave it in the fridge until you use it.
  2. Preheat oven to 180°C.
  3. Wash Rhubarb, trim the ends, and cut into 3-4cm pieces. (DO NOT cut them into small pieces.) Peel Apple, remove the core, and cut into 2cm pieces.
  4. Combine Rhubarb, Apple, Caster Sugar, Orange Zest & Juice in a large baking dish. *Note: You can do this process using a separate mixing bowl, then place the combined ingredients in the baking dish.
  5. Spoon the Crumble Topping over the Rhubarb and Apples, and bake for 30 to 35 minutes OR until the Crumble is nicely browned and the Apples are just soft. DO NOT overcook.

  6. Serve with Whipped Cream OR Vanilla Ice Cream.
