I have cooked Scallops in different flavours, but my absolute favourite flavour for sure is ‘Garlic Butter and Soy Sauce’. This simple combination does a magic, and it is also very versatile. You can add extra ingredients to it, for example, you may wish to add Chilli.

100g Scallops *pat dried with paper towel if wet
10g Butter
1 clove Garlic
2-3 Bok Choy Leaves *cut into thin strips
*Note: You can use other Green Leafy Vegetable such as Spinach.
1 Serving warm Cooked Rice
1/2 sheet Toasted Nori *torn into small pieces
1/2 Spring Onion *finely chopped
Toasted Sesame Seeds

Sauce
1/2 tablespoon Mirin
1/2 tablespoon Soy Sauce

Method
  1. Melt Butter in a frying pan over medium low heat, add Garlic and cook until aromatic and slightly browned.
  2. Add Scallops and cook until both sides are lightly browned. Make a room in the frying pan, add Green Vegetable, and cook until softened. Add Mirin & Soy Sauce, and mix to combine.
