
I saw fresh Tuna fillet was on special at a supermarket and I bought it. However, I realised it was not very fresh and it smelled fishy. If you cook not-so-fresh Tuna fillet that smells fishy, I recommend to blanch it first, then simmer in a sauce. I would rather season it strongly.

Ingredients
200 to 250g Tuna Fillet(s)
Sauce
1 & 1/2 tablespoons Sugar *alter the mount to suit your taste
3 tablespoons Sake (Rice Wine)
2 tablespoons Soy Sauce
2 tablespoons Mirin
1 small piece Ginger *cut into fine strips
Chilli *optional
Method
- Cut Tuna Fillet(s) into bite-size pieces, blanch in boiling water in a saucepan until the surface changes colour, then drain. This process reduces the fishy smell.
- Place all the Sauce ingredients in the saucepan and bring to the boil over medium heat. Add the drained Tuna pieces, and simmer, turning the Tuna pieces occasionally, for 5 to 6 minutes OR until the sauce is reduced, depending on how strong the flavour you like.
