I saw fresh Tuna fillet was on special at a supermarket and I bought it. However, I realised it was not very fresh and it smelled fishy. If you cook not-so-fresh Tuna fillet that smells fishy, I recommend to blanch it first, then simmer in a sauce. I would rather season it strongly.

Ingredients

200 to 250g Tuna Fillet(s)

Sauce
1 & 1/2 tablespoons Sugar *alter the mount to suit your taste
3 tablespoons Sake (Rice Wine)
2 tablespoons Soy Sauce
2 tablespoons Mirin
1 small piece Ginger *cut into fine strips
Chilli *optional

Method
  1. Cut Tuna Fillet(s) into bite-size pieces, blanch in boiling water in a saucepan until the surface changes colour, then drain. This process reduces the fishy smell.
  2. Place all the Sauce ingredients in the saucepan and bring to the boil over medium heat. Add the drained Tuna pieces, and simmer, turning the Tuna pieces occasionally, for 5 to 6 minutes OR until the sauce is reduced, depending on how strong the flavour you like.
