
Japanese Macaroni Salad can be made with any short pasta, but Spaghetti are popularly used. There are products of Dry Spaghetti that are already cut short, ready to use for salads. But you don’t need such products as you can snap Dry Spaghetti easily. This salad can be a great side dish, but I actually like to eat it as a meal.

Ingredients
100g Spaghetti *snapped to 5-6cm in length
1/2 Continental Cucumber *about 140g
1 small Carrot
1/4 Red Onion *thinly sliced
4 slices (about 50g) Ham *cut into strips
1 to 2 Boiled Eggs *coarsely chopped
1/4 to 1/3 cup Japanese Mayonnaise
1/2 to 1 teaspoon Dijon Mustard *optional
Salt & Pepper
Method
- Snap Dry Spaghetti to 5-6cm in length. DO NOT try to snap all of them at once as they would break into smaller than you aimed. Cook the snapped Spaghetti in boiling salted water as instructed.
- Cut Cucumber and Carrot into thin strips, place in a mixing bowl, add thinly sliced Onion, and lightly season with Salt & Pepper, and mix to combine.
- When the Spaghetti are cooked, drain, cool with cold water, drain well, and add to the bowl. Add Ham, Boiled Eggs, Japanese Mayonnaise and Dijon Mustard, and mix to combine. Add extra Salt & Pepper if required.
