This is a very simply soup. Naturally you can add other Vegetables and Mushrooms. To add the spiciness, I used Gochujang (Korean Spicy Miso). I am not very good with Chilli, but 1 tablespoon, which seems a lot to me, was a good amount that created enjoyable spiciness.
1 to 2 teaspoons Sesame Oil
1 clove Garlic *finely chopped
1/2 Onion *thinly sliced
200g Pork *cut into bite-size pieces
2 cups Chicken Stock *OR 2 cups Water & 2 teaspoons Asian Chicken Bouillon Powder
1/2 tablespoon Soy Sauce
1 tablespoon Gochujang (Korean Spicy Miso) *You may wish to add more
2 Potatoes *cut into bite-size pieces
1/2 Spring Onion *finely chopped
- Heat Sesame Oil in a saucepan over medium heat, cook Garlic, Onion and Pork for a few minutes.
- When Pork changed colour, add Chicken Stock and bring to the boil, and season with Soy Sauce and Gochujang (Korean Spicy Miso).
- Add Potato pieces, and simmer for 15 to 20 minutes or until Potato is soft. Add extra Soy Sauce if required.
- Sprinkle with some finely chopped Spring Onion and enjoy with freshly cooked Rice. *Note: You can pour this soup over the Rice.
