At an ALDI store, I saw a frozen food package named ‘Spinach & Ricotta Potato Gratin’ and it looked so yummy. I don’t buy processed food these days but I really wanted to try it. So I created it by myself. I can declare that this is another Super-easy Recipe. You can bake all servings in one large oven dish or individual servings in ramekins like I did.

4 Servings
Ingredients
4 Potatoes
1 Onion *finely chopped
1 clove Garlic *finely chopped
4 pieces Frozen Chopped Spinach *OR 1 bunch Fresh Spinach, washed and chopped
250g Ricotta Cheese
Salt & Pepper
Olive Oil *OR Oil of your choice
Parmesan Cheese *grated
Method
- Peel Potatoes and cut into small cubes. Cook in salted water until soft. Drain and half-mash lightly.
- Heat 1/2 tablespoon Oil in a frying pan and cook finely chopped Onion and Garlic until tender. Season with Salt and Pepper.
- Defrost the Frozen Chopped Spinach pieces and remove excess liquid. If you use Fresh Spinach, you can cook it with the Onion.
- Combine half-mashed Potatoes, Onion mixture, Spinach and Ricotta. Add some more Salt and Pepper to taste only if requires. Be carefull as Ricotta can be quite salty.
- Oil the base and side of ramekins or a baking dish and spoon the mixture. Top with plenty of grated Parmesan Cheese. Bake at about 200℃ for 20 minutes or until cheese is melted and golden.
- *Note: It can be easily removed from the ramekins, so that you can place the individual gratin on serving plates.

4 pieces of frozen spinach? What does that mean? What weight?

Hello. Frozen chopped spinach comes in blocks that are 2-3cm in size, but I don’t know how much those blocks weigh as they contain a lot of water. Please think about how much Spinach you want to use for each serve. The amount is up to your preference. You can add more or less.

Hi Kathryn. Thank you for finding this recipe. Honestly, I have never frozen this dish, so I cannot be certain. I would try with my 1000W microwave for 1 minute per serving, then heat further until hot. I wouldn’t use the oven for reheating this dish.

I saw them in the supermarket as you did and bought them to try. The instructions were to cook at 200 in the oven for 25 minutes turning halfway through, but I don’t know if they were pre- cooked or just the potatoes…perhaps not cooked judging by your calculations for reheating. They were very nice but expensive which is why I searched for a recipe and found your amazing site, which I shall be using for many meals.
