This is a yummy ‘Otsumami’, that is something you eat with alcoholic drinks. I reckon chilled beer would be great. I like to eat it with freshly cooked rice, too. If you chop up Walnuts finely, this can be a sauce for grilled Tofu, Chicken, etc. I sometimes add Chilli. How would you enjoy it?

Ingredients
2 tablespoons Sugar
2 tablespoons Miso *I used 1 tablespoon of each White Miso and Red Miso
1 tablespoons Mirin, Sake (Rice Wine) OR Water *Mirin adds extra sweetness
1 cupful Roasted (Toasted) Walnuts *about 110g
Toasted Sesame Seeds *optional
Chilli *optional
Method
- Walnuts need to be lightly roasted OR toasted. Break them into smaller pieces OR finely chop up if you want to do so.
- Combine Sugar, Miso and Mirin (OR Sake, Water) in a small saucepan. Heat over low heat and bring to the boil, stirring constantly, and cook for 1 minute.
- Add Roasted (Toasted) Walnuts and combine. You can mix some Toasted Sesame Seeds OR sprinkle some on top when you serve. *Note: Chilli can be added.

Hi, The walnuts look quite tasty and I would like to make them as a side dish stock for my bentos. How long can they be preserved after making them?
