I heard that Potato Pancakes are very popular in Ukraine. Ukrainian style Potato Pancakes are made with mostly Potatoes. You only need a small amount of Flour. To achieve that, you got to drain the grated Potatoes and remove excess water. You might be interested in my ‘Potato & Smoked Salmon Pancakes’.

Makes

10 x 8cm Pancakes

Ingredients

2 medium Potatoes *about 300g
1/4 Onion
1 Egg
1/4 teaspoon Salt
Ground Pepper as required
3-4 tablespoons Plain Flour OR Self-Raising Flour
*Note: Self-Raising Flour makes fluffy Pancakes
Oil for cooking
Sour Cream to serve *Today I served with ‘Mushroom Sour Cream Sauce’
Garlic & Salt to mix with Sour Cream

Method
  1. Peel Potatoes and finely grate Potatoes and Onion. Place the grated Potatoes and Onion on a colander, and drain well. I recommend to press down and remove excess water.
  2. Place the drained grated Potatoes and Onion in a mixing bowl, add Egg, Salt and Pepper, and mix well. Add Flour and mix to make thick batter.
  3. Heat Oil in a frying pan over medium low heat, cook Pancakes about 8cm in size until both sides are nicely browned and cooked through.
  4. Serve with Sour Cream mixed with some grated Garlic and Salt. Today I served with Mushroom Sour Cream Sauce.
