Using ‘Tempura’ Batter, that can be made with Plain Flour, Potato Starch, Egg and Water, you can make a variety of savoury pancakes. Today I used Chikuwa (Japanese Tube-shape Fish Cakes) and Spring Onions. You can use Garlic Chives instead of Spring Onions. Add as much as you want if you can combine with the batter.

Ingredients

100g Chikuwa (Japanese Tube-shape Fish Cakes)

2 to 3 Spring Onion *OR Garlic Chives
*Note: You can add as much as you want if you can combine with the batter
Oil for cooking
Shichimi (Japanese Chilli Spice Mix) *optional

Batter
1/4 cup Plain Flour
1/4 cup Potato Starch *OR you can use extra Plain Flour
1/2 teaspoon Salt
1 Egg
2 tablespoons Water *plus extra if required

Method
  1. Mix the Batter ingredients in a mixing bowl. Alter the amount of Water to make thick Batter.
  2. Thinly slice Chikuwa and Spring Onion, add to the batter, and mix to combine. *Note: If you use Garlic Chives, cut 1-2cm in length.
  3. Heat Oil in a frying pan over medium low heat, form a large pancake OR 2 to 4 smaller pancakes, and cook until both sides are nicely browned and crispy.
  4. Cut into smaller pieces if large, sprinkle with some Shichimi (Japanese Chilli Spice Mix), and enjoy.
  5. Dipping Sauce: If you want to enjoy the pancake with a dipping sauce, I recommend ‘Ponzu’ with Chilli Oil. Alternatively, mix 1 tablespoon Rice Vinegar and 1 tablespoon Soy Sauce, then add Chilli Oil OR Crispy Chilli Oil.
