I recommend to use a lighter coloured Miso for this one.

Ingredients

1 can (110g) Sardines in Springwater *drained
1 large Spring Onion *sliced diagonally
1 teaspoon Sesame Oil *OR Oil of your choice
1 serving warm Cooked Rice
Shichimi (Japanese Chilli Spice Mix) OR Ground Chilli *optional

Miso Sauce
1 tablespoon Miso *White Miso recommended
1 tablespoon Sake (Rice Wine) *OR Mirin for sweeter flavour
1 & 1/2 teaspoons (1/2 tablespoon) Sugar
1 teaspoon Grated Ginger

Method
  1. Make Miso Sauce by mixing all ingredients in a small bowl.
  2. Place drained Sardines, Spring Onion and Sesame Oil in a small frying pan, heat over medium heat, and cook for a minute.
  3. Add the Sauce and simmer over a low heat for a minute, and let all combined well.
  4. Half fill a bowl with warm Cooked Rice and cover it with the Sardine mixture. Sprinkle with some Shichimi (Japanese Chilli Spice Mix) OR Ground Chilli, and enjoy.
