The other day, my daughter was trying to make Lemon flavoured cookies for her colleague who loves Lemon. I suggested her to add Lemon Zest and Juice to a basic cookie dough and drizzle Lemon Icing on the baked cookies. That’s the easiest way to make Lemon flavoured cookies. Here is my recipe. These are very basic yet delicious cookies for Lemon lovers.


Makes

24 Cookies

Ingredients

125g Butter *softened
1/2 cup Caster Sugar
1 large Egg *lightly whisked
Zest of 1 Lemon *grated
1 tablespoon Lemon Juice
1 & 3/4 cups Self-Raising Flour

Lemon Icing
1/2 cup Icing Sugar
1 tablespoon Lemon Juice

Method
  1. Preheat oven to 180℃. Line 2 baking trays (OR 1 large baking tray) with baking paper.
  2. Beat softened Butter and Sugar until smooth and well combined. Beat in Egg and mix well. Add Lemon Zest, Lemon Juice and Flour, and mix to form a dough.
  3. Roll the dough into 24 balls and place on the prepared tray(s). You may wish to press down slightly.
  4. Bake for 15 minutes or until golden, transfer to a wire rack, and cool completely.
  5. Mix Icing Sugar and Lemon Juice in a small bowl, dip the top of the cooled cookies to coat, and leave on the wire rack until the icing is dry to touch.
