In Japan, when we make cucumber salad, we often gently bash the cucumber before cutting it or breaking it into small pieces, so that the centre gets slightly squashed and softened, and the cucumber pieces get seasoned better. Ingredients

1 large Continental Cucumber OR 2 Lebanese Cucumbers *about 300g
1/4 teaspoon Salt
1 tablespoon Toasted Sesame Seeds *lightly ground
1 small clove Garlic *grated
1 teaspoon Rice Vinegar
1 teaspoon Soy Sauce
1 teaspoon Sesame Oil

Method
  1. Wash Cucumber and place it on the cutting board. Use a rolling pin to bash gently until it cracks. Break or cut it into bite-size pieces.
  2. Sprinkle Salt and massage, then set aside a few minutes.
  3. Combine all other ingredients in a small bowl, and add to the cucumber. Combine well and serve immediately.
