
I had been making ‘Super Easy Canned Sardines Rice Bowl’ for many years before I realised that I had never made it with canned Mackerel, even though Mackerel is my favourite fish. So, I tried to make it with canned Mackerel, and I absolutely loved it. Much better than Sardine version.

Ingredients
1 can (125g) Mackerel in Brine *drained, broken into bite-size pieces
1/2 teaspoon grated Ginger *OR 1 small clove Garlic, grated
1 Spring Onion *finely chopped
1 teaspoon Toasted Sesame Seeds
1 teaspoon Sesame Oil
1/2 to 1 teaspoon Chilli Sauce *e.g. Toban Djan (Chilli Bean Sauce)
1/2 teaspoon Soy Sauce *add more if required
1/2 sheet Toasted Nori
1 serving warm Cooked Rice
Shichimi (Japanese Chilli Spice Mix) OR Ground Chilli *optional
Method
- Combine Toasted Sesame Seeds, Sesame Oil, Chilli Sauce and Soy Sauce in a bowl. Add Mackerel and Spring Onion, mix to combine. *Note: Mackerel in Brine is often quite salty, but add extra Soy Sauce if required.
- Toast Nori over gas flame OR a heat source until aromatic and crispy. The colour of Nori should turn greenish colour.
- Half fill a bowl with warm Cooked Rice and cover it with the Mackerel mixture, add Nori on top, sprinkle with some Shichimi (Japanese Chilli Spice Mix) OR Ground Chilli, and enjoy.
