Have you got leftover Bolognese Sauce? Try this Doria. ‘Doria’ is a dish of butter rice or pilaf covered with white sauce and grated cheese, then baked in the oven. You can find my ‘Doria’ recipes on this website, but this is the easiest Doria recipe if you already have Bolognese Sauce.

Ingredients

4 servings Cooked Rice
20g Butter
1/2 Carrot *finely grated
Salt & Pepper
1 to 2 cups Bolognese Sauce
1 cup Tasty Cheese *grated, you can add grated Parmesan
*Note: You may wish to add some other Vegetables to the Rice. *e.g. Peas, Broccoli, etc.
1-2 teaspoons Oil *for greasing the baking dish

White Sauce

40g Butter
1/4 cup Plain Flour
2 cups Milk
Salt & Pepper

Method
  1. Preheat oven to 200℃.
  2. Place 20g Butter and grated Carrot in a heat-proof bowl. Cook in the microwave for 1 minutes, stir then cook 1 more minutes. Add cooked Rice and mix to combine. Season with Salt & Pepper. Alternatively you can cook using a frying pan.
  3. To make White Sauce, heat Butter in a saucepan over medium heat until melted and foaming, add Flour and cook stirring until mixture bubbles. Slowly add Milk, stirring constantly until sauce boils and thickens. Season with Salt & Pepper.
  4. Slightly Oil a large ovenproof dish, place the Rice mixture and pour the White Sauce over the Rice. Place Bolognese Sauce. Cover with grated Cheese, and bake for 20 minutes or until golden.
